Paddestoelen als functional foods

De wetenschappelijke belangstelling voor gezondheidsbevorderende stoffen in paddenstoelen neemt toe. Volgens de auteurs zou er best een advies aan de Nederlanders mogen komen waardoor de paddenstoelenconsumptie omhoog gaat, gezien de voedingswaarde ervan. Ook zien ze mogelijkheden voor meer functional foods op basis van paddenstoelen.
